This is an extremely hard to get cut, one of the best kept Argentinian secrets. English translations are sometimes “flank steak” but forget about that. Until you’ve tried it you don’t know what’s good. Warning: do not overcook or undercook! Has to be cooked to the exact point of “jugoso” (“saignant”)
